Little's Lunches

Whenever I had posted Little's Lunches in the past, it was on a Monday to have fresh ideas of what to pack in lunchboxes throughout the week. This past weekend though, we were crazy busy, the kids had off of school for Columbus Day on Monday and then my daughter was home sick on Tuesday. Typical busy family life situation, right? Which is exactly why planning lunchboxes can be so difficult sometimes.....so I'm going to start posting lunchbox ideas on Friday so that by the time Monday rolls around, there's already a set of menus to pull from! Hope this helps!! 
 Monday: Harissa Honey Grilled Ham Skewers, Hawaiian Bread Roll, green beans, moon cheese, kiwi and pineapple
Tuesday: Bow Tie Pasta Salad, moon cheese, delic sliced ham, blackberries

Lunchbox Ideas to Get You Through the Week

Who else is already feeling burnt out on Lunchbox ideas?
It can be so easy to get overwhelmed with the chore of figuring out what to send your kids that is allergy free, healthy and kid approved. Nothing is more annoying than packing a lunchbox and then  seeing it come home barely touched at the end of the day. This will inevitably lead to a kid that just wants a snack all afternoon right up to dinner because they're starving. Super fun scenario, am I right? I'm currently working on a downloadable PDF print out to share of ideas that will serve as an easy reference and go-to when you need inspiration, but in the meantime, here's a peek of what I've been sending my kids this past week:
 Monday: watermelon, cucumber, carrot coins, ranch, baby tomatoes, broccoli and cauliflower, mini naan bread, turkey, I let the kids pick one small piece of candy as a treat
 Tuesday: leftover boiled shrimp, ranch, a cutie orange, honey wheat pretzel rods, cucumber, baby tomatoes, black olives, black grapes
 Wednesday: Pepperoni and Meunster cheese squares, ranch, yellow bell pepper slices, honey wheat pretzel rods, strawberries, dried cranberries and edemame
 Thursday: Pepperoni and Cheese, edemame, a cutie orange, strawberries, dried cranberries, yellow bell peppers and mini yellow tomatoes
Friday: Pepperoni and Cheese (this is clearly a hit with my daughter right now), salad, Ranch, dried cranberries, strawberries, veggie straws

Weber Grill Academy, St Louis MO

A few months back, my Bacon Pimento Cheese Cherubs won the Grand Prize in the
Nature Sweet Tomatoes Tomato-Vators recipe contest! Part of the package was the awesome new gas grill that is now on my porch, but the best part finally happened this past weekend.
As part of my grand prize, Louis and I were flown to St Louis, MO to visit the Weber Grill Academy, cook with the chefs there and learn all about cooking techniques on their gas and charcoal grills.
  Here's what was explained to me before we left:
Your package includes an exclusive, personalized experience with their Grill Academy Chef using both charcoal and gas Weber Grills. Your tour will begin at the restaurant and Grill Academy. There will be a private bartender in the room to accommodate your needs. 
Your menu will be:

What What?! To say I was excited is a huge understatement. They had me at "Private Bartender"
I knew the brief description sounded awesome, but I was truly blown away once we got there and realized that we had the entire cooking classroom, that usually seats 22 students all to ourselves! The table was set beautifully and had 2 gift bags for us, a mimosa was ready for me almost immediately and we rolled up our sleeves to started cooking.
Chef Keith had 3 grills ready to go with charcoal and he had Louis fill the grill baskets. Luckily no eyebrows were lost
All of our dishes were prepped for us and since I knew it was going to be a huge meal, I hadn't eaten breakfast. I'm really glad I didn't because the amount of food we made was insane!
First up was the Grill-Fired Mussels with Nature Sweet Tomatoes
Louis and I both love mussels, but I've always done them on the stovetop, so this was a treat!
You might not be able to tell, but the grill we cooked them on had an opening in the center of the grates so the dutch oven could be set inside of it. Totally want one of those now! We grilled the garlic bread around the pan while the mussels cooked and it was finished in maybe 8 minutes.
Each dish was paired with amazing wine, so for the Mussels we cooked with and sipped Cakebread Savignon Blanc. Tons of garlic, tons of butter- I was so happy!
We sat at our table and enjoyed our mussels while the dishes were cleaned up and the next prep tray was brought out. I really wish it was like that in my own kitchen! Let me just sit here and enjoy my wine while you clean up after me...
Grilled Caprese Nature Sweet Tomato Salad, Grilled Roasted Ratatouille stuffed in Nature Sweet Tomatoes and Grilled Lyonnaise Potato Salad was next. As I was chopping I mentioned how much I loved the knife that I was using. Chef Keith said "well then you're really going to like your gift bags"
I was SO excited that the knives we used were included! Totally didn't expect that and I can tell you, I've used it every day since I got back home. Joking with Louis while we were chopping, I said "I hope I remember how to make all of this" and, of course, that was already taken care of. Every recipe we made was typed up and included in our giftbags already. How thoughtful is that?!

I'm not sure if you can tell from the picture, but these steaks were MASSIVE
and the lobster tail on the side was absolutely divine! Grilled and basted with a lemon, garlic, basil butter - I ate the entire thing
Naturally, these courses were paired with the perfect wine
Chateau Gruaud Larose, a Bordeaux from France
Then came the cobbler. We smoked cherries, blueberries and cranberries in a grill basket with Cherrywood and charcoal, topped them with an oatmeal cookie type streusel and "baked" them on indirect heat in the grill while we ate our meal. Once it was done, it was topped with cherry vanilla ice cream and served with Dow's 20 Year Old Tawny Port

After a sip I carefully handed it over and let him enjoy the rest.
That was not the time for me to be clumsy and spill
After dessert, we were given a tour of the kitchens for the restaurant before we packed up all of our gift bags and headed back to the hotel.
From start to finish we were spoiled and treated like royalty. It makes me feel so grateful and lucky that this little hobby of mine, that I started on a whim 11 years ago, has led me to experiences like this. An unforgettable day that truly couldn't have been better!

Big TX Brisket Bock Bucatini with Mini Rellenos and Cilantro Pesto

I am so excited and a little shocked that I was recently accepted to compete in Barilla's Represent Your Region Contest! Competitors were sent an assortment of Barilla pastas and challenged to create a dish inspired by their region. As I brainstormed what to make to represent Texas the best, I was overwhelmed with the list of ideas I had. I managed to edit it down and I am really excited with what I came up with!
I made a Tex-Mex braised beef brisket sauce loaded with chiles, smoked salt and Shiner Bock beer and tossed that with Barilla's bucatini pasta. Drizzled on top is my Tex-Mex spin on a pesto with cilantro, lime and pepitas. The crowning glory is my "Mini Rellenos" - roasted jalapenos stuffed with cheese and fried just like their tex mex big brother Chiles Rellenos!
The grand prize for this contest is an all expense paid Culinary Weekend experience at Barilla’s annual Modern Casual retreat at Farmer Lee Jones'Culinary Vegetable Institute in Cleveland, OH!!! 3 dried guajillo chiles, stems and seeds removed
2 cups boiling water
1 Tablespoon ancho chile powder
4 cloves garlic
2 teaspoons ground toasted cumin seeds
1 teaspoon dried Mexican oregano
1 teaspoon ground toasted coriander
1 teaspoon smoked Mexican sea salt       
1 14.5 ounce can fire roasted tomatoes with garlic
3 pounds beef brisket
1 Tablespoon kosher salt
2 Tablespoons butter
1 Tablespoon canola oil
1 large onion, chopped
1 large poblano pepper, chopped with seeds and stem removed
12 ounces Shiner Bock beer

1 cup packed cilantro leaves
2 Tablespoons lime juice
1 small clove garlic
1 Tablespoon minced jalapeno pepper
2 Tablespoons  olive oil 
1 Tablespoon salted roasted pepitas
1/2 teaspoon smoked Mexican sea salt       

6 large jalapeno peppers
4 ounces oaxaca cheese, cut into 6 sticks
4 cups frying oil
2 egg whites, at room temperature
1 egg yolk, at room temperature
1/2 cup flour


1 Tablespoon kosher salt
1 12-ounce package Barilla Bucatini


Preheat oven to 350°F.

Place chiles in a medium bowl. Pour the boiling water over them and place a small glass plate on top to weigh them down. Soak until chiles soften, at least 30 minutes.
Place chiles in blender along with the soaking liquid, chili powder, garlic, cumin seeds, oregano, coriander, smoked salt and tomatoes; blend until smooth.

Pat beef dry, remove excess fat and cut into 3 inch cubes. Sprinkle with kosher salt. Melt the butter and oil over high heat in a large heavy based pot. Working in batches, add brisket and sear on all sides until browned, then remove to a plate and set aside. Turn heat down to medium low and add the chopped onion and poblano. Sauté for 5 minutes, or until the vegetables have softened. Add the beer, brisket (add the juices too) and the chile puree.

Bring the mixture to a simmer. Cover and place in oven for 2 hours. Uncover and continue to cook about 1 hour longer or until the beef is tender enough to pull apart with forks and the liquid has reduced to be a thick sauce.

While the brisket is cooking, place the cilantro, lime juice, garlic, jalapeno, olive oil, pepitas and salt in a small food processor and blend until smooth.  Pour mixture into a squirt bottle for later use.

Remove the brisket from the sauce onto a large sheet tray. Skim off any fat from surface of sauce and shred the brisket coarsely with two forks, discarding any remaining fat. Return the shredded meat to the sauce, cover the pot and set aside until ready to serve.

Place the jalapenos over a gas flame or underneath the broiler and char until they are blackened on all sides. Place them in a bowl, cover tightly with plastic wrap and let stand for 10 minutes. Peel the charred skin off and carefully make a small slit one side of the pepper. Fill the peppers with the cheese and secure with a toothpick. In a large heavy-bottomed saucepan, pour in oil and heat over medium-high heat until the oil reaches 375 degrees. Beat the egg whites in a medium mixing bowl until soft peaks form. Add the egg yolk and continue to beat until combined. Dredge the filled peppers in flour, shake off any excess, then dip the into the egg mixture. Fry until golden brown, about 3-5 minutes and drain on a cooling rack placed on a cookie sheet.

Bring a very large pot of water up to a boil over high heat. Add 1 Tablespoon of salt and add pasta and cook until al dente, about 7 minutes.

When the pasta is ready, reserve 3 cups of the pasta water and drain. Add the pasta to the ragu mixture, along with 1 cup of the reserved pasta water and stir to combine. Gently toss the pasta over medium high heat for 3-5 minutes, until the sauce coats the pasta.

To serve, place a serving of pasta in a large bowl, drizzle with the cilantro vinaigrette and top with mini rellenos. Serve immediately, makes 6 servings.

NOLA Thanksgiving Restaurant Tour

For Thanksgiving week, we were in New Orleans, and keeping with tradition we stuffed ourselves like we do each time we go home. Louis and I have a running joke (but we're not really joking) that every time we go home we gain 5 pounds. At least a week before we arrive usually, every meal has already been planned for us, and this time was no exception. Here are just a few highlights of the meals we tried while we there:
You can't go to Drago's without getting their charbroiled oysters, and our order of a dozen lasted about 3 minutes. The kids fought over who would get more of them and pretty much inhaled them the minute the waiter set the platter on the table. If you've never had them before, Charbroiled Oysters are fresh shucked oysters on the half-shell that are brushed with an herb butter and then loaded with parm and romano cheese and broiled over a hot grill. I really can't decide what I love more; the oysters themselves or soaking up the herb and cheese butter that's leftover with French bread.
My mom got the lunch special: Stuffed Crab topped with Crabmeat Au Gratin, served with Rosemary Potatoes and Greens. Even though she could only finish half of it, she loved it! I got the Fried Shrimp Remoulade Po-boy which was REALLY heavy on the horseradish- if you don't like spice, this is not the dish for you. Louis got a fried oyster po-boy and both po-boys were roughly the size of an infant. I couldn't even eat a fourth of it, but we all left stuffed and happy.
That night we met friends for dinner and tried Legacy Kitchen. To start we ordered the Blue Cheese Chips. House made thick cut chips covered in a creamy béchamel, truffle herb aioli and crumbled blue cheese. Holy deliciousness- these are so rich, decadent and completely divine. I tried their Prosecco with Limoncello and it was SO good with the chips! Louis got the prime rib for dinner. He said it was great but I couldn't even look while he ate it. Beef has never been a favorite of mine, and the pink meat with huge hunks of fat on the side is not appealing to me. After eating the super rich blue cheese chips I settled on the Tuna Tango Salad; seared ahi tuna with avocado, mango, macadamia nuts, won-ton strips and a delicious ginger-lime dressing. By the time I got my salad I was too busy chatting to get a picture, but here's the pic from their website so you can see just how pretty the salad was:

 The next day I was so excited to finally try Coquette for brunch. The last two times we were in town we made attempts to get over there and for one reason or another it fell through. I was so happy to make my way to Magazine Street and finally see what all the fuss was about
Coquette has a new menu every day, which in turn, will always leave you with something new, exciting and hyper seasonal to try. We started off with the charcuterie board which included house pickled vegetables, hogs head cheese, boudin balls and a really delicious pate. The plate below it is a crudo topped with one of the best shaved Brussels sprouts, parsley and mint combos I've ever had. Totally bright, crunchy, fresh and so nice along side the heavy meat board.
For our meals, we tried the Shrimp and Grits with a Louisiana hot sauce gravy, tasso, Brussels sprouts and fried kale.  The sauce was absolutely delicious and I kept reaching into Louis' plate with my spoon to get the rest of it before the waitress snatched up the plate. I had the perfectly crispy seared scallops with chorizo, arugula, charred red onion and a surprise sauce that wasn't listed on the menu. It looked like small bubbles on the plate, but it was actually spicy and sweet and very thick. If I had to guess I would say it was pepper jelly reduction, but whatever it was, I ate it all happily. 
That evening we went to Katie's in mid-city. It's been featured on Diners Drive Ins and Dives before and I love how right outside the door they have a small plaque showing you the line of water left by Hurricane Katrina. I had to try their Pimm's Cup and it did not disappoint!
We started the meal with Charbroiled Oysters and their Seafood Stuffed Beignet. This Beignet is HUGE and overstuffed with crawfish, crabmeat, shrimp, jalapeno peppers, onions, and three kinds of cheese; fried then topped with a jalapeno aioli
For our entrees we got "The Legend"; a piece of French bread about as long as my forearm stuffed with their amazing cochon de lait and BBQ shrimp. This was one of those sandwiches that is so messy it ends up being all over you and so delicious you don't even care that you're wearing it. We also tried the nightly special which was Drum on top of a Seafood Stuffed Mirliton with a Seafood Cream Sauce. I forgot how much I love mirlitons and after having this delicious version, I will definitely be making some at home soon!
I made sure to go to Rouse's and stock up on some essentials before heading home  in the worst holiday traffic EVER. Thank the good Lord for DVD players that come with headphones because that is all that saved us that day.

San Diego, CA and the Riunite Chili Cook-Off

In October I took part in the Riunite Chili Cook-Off and won my region! I felt pretty proud to win a chili cook-off in TX of all places, and was so excited for the next phase, which was held in San Diego, CA
I can't put into words how excited I was to get back to CA and see the city that means so much to Louis and me again. After Hurricane Katrina, Louis was given an opportunity to work there and we moved to a little town right outside of San Diego called Encinitas. We were married there, our son was born there and we haven't been back in six years! There were so many memories that came flooding back to me as we made our way around the city. At the airport we got in our car and headed straight to one of our favorite spots, Las Olas. While living nearby, we brought anyone that visited us here and it was one of the first places I tried fish tacos!
 It was just as delicious as I remembered it! I tried the Peppered Pineapple Margarita that delivered a serious kick- if you are timid with spice do not get this one! Louis knew what he was ordering before we even got there- the Mixed Seafood Chile Relleno which was served with rice and beans. I got the Mixed Seafood Sauté which was large shrimp, fish and scallops sautéed with white wine, butter, garlic, cilantro, tomato, onion and chile served with cabbage salad and beans. By the time we were finished we were stuffed and walked across the street to the beach
The water was cold, the beach was beautiful and in that moment I couldn't ask for more from life
The next morning was the Cook-Off finals!
We didn't have to be at the stadium until 10am, so we found a cute little café to have brunch at first. Café 21 is absolutely adorable and the menu was quite impressive. Just reading it gave me a handful of ideas on dishes I could create myself once I got back home. I LOVE and adore brunch and reading the menu made it hard to decide what to settle on. I got the raspberry mimosa which did not disappoint. Two of my favorite things in a glass to start the day off sounded like a perfect plan to me. When Louis told the waitress that he'd like a Bloody Mary she replied "red, yellow or green?"
Say What?!
Looking at the dumfounded expressions on our faces she then explained to us that they make all of their drink mixes from scratch and they offer a traditional red, yellow heirloom and a green tomato tomatillo bloody mary. She recommended the yellow one, and Louis is unable to tell people no, so he got it. He really didn't care for it but I thought the sweetness and lack of overt acidity was wonderful. To eat, Louis got the Short Rib Cast Iron Omelet with Fig and Chai Tea Marinated Beef Short Rib, Bell Pepper, Caramelized Onions and Gorgonzola Cheese. The picture doesn't do this dish justice. It was absolutely moan-worthy! I got the Shrimp Corn Cakes- shrimp, sweet corn, potato and  Mozzarella Cheese cakes with Cilantro Cream Sauce. I live for Benedicts of any kind but I was disappointed with this one. The plate was gorgeous but was seriously lacking seasoning. I would definitely try Café 21 again, but I would order a different entrée.
When we were done eating we headed over to the Chargers Stadium for the final Cook-Off
I had a bit of trouble throughout the morning once we got there, which really stressed me out. This is the first cook-off I had been in where we were required to bring our dish already prepared with us. I made my chili the day before, double sealed it in FoodSaver bags and then proceeded to blow TSA's mind by walking like a crazy person through airport security with bagged chili and a fresh pineapple.
(It kind of reminded me of the SATC episode where Carrie is in jury duty and the old man brings a coconut, a pineapple and random things with him each day in his briefcase) 
Because the chili was previously frozen, it was still icy once we got to the tailgating site. We were all provided with crockpots to heat our chili up in, but the generator that my crockpot was plugged into kept shutting off. Over, and over and over. Then the judging time was moved up earlier and I was freaking out. Like total and complete panic mode. I would have felt humiliated if I had served judges ice cold chili. Certain things taste ok if it's not absolutely warmed through. Chili is not one of those things.
I was able to get my dish heated the way I wanted at the last second, and I served the best plate I could. After the judging we had one more fish taco stop before heading home!
 In the end, I didn't win the finals BUT.... I  made amazingly sweet new friends (Hi Ronna, Shana and Donna!!) and I had a free trip to San Diego with my husband. I feel like I was lucky to get the experience and I hope we don't wait another six years to visit again!

So Thankful

I hope you all had a delicious Thanksgiving! 
I love Thanksgiving for reminding us of all the good things around us, for getting together with family and of course for the food!
A smoked turkey with roasted garlic gravy, dressing, rice, bacon wrapped glazed green beans, baked macaroni and cheese, bourbon pumpkin pecan tart and apple cream cheese danish tart was on our table and I'm really sad to say that it's mostly gone already!
 One of my favorite things about Thanksgiving is the leftover turkey that I turn into Gumbo. And there is no better meal to warm up with while decorating the tree and getting the house decorated for Christmas than Gumbo in my opinion!
 I am so excited to be getting ready for Christmas and Christmas with kids is so much more fun!

Engagement Party Menu

Today I am packing and getting everything in order for our big trip! 
Since I'm making burgers tonight for the last time in Austin I am sharing the rest of the menu I served for the engagement party I hosted.

Because it doesn't matter how long you plan for an event I was still cooking as guests were arriving so some of the dishes I didn't get a chance to get pictures of. Here's what I did have time to snap pictures of:

 Southwest Baked Pimento Cheese Dip

Southwest Baked Pimento Cheese Dip
recipe from here
3 cups mayo
3 cups diced roasted red bell pepper
1/2 cup sliced green onion
2 large jalapeno peppers, seeded and diced
1 16oz block sharp cheddar cheese, grated
1 16oz block pepper jack cheese, grated

Preheat oven to 350°. Stir together first 4 ingredients in a large bowl; stir in cheeses. Spoon mixture into a lightly greased 9x13in. baking dish.
Bake at 350° for 20 to 25 minutes or until dip is golden and bubbly. Serve with baguette slices.
