Better Late Than Never

Sometimes life is just crazy
busy, hectic and at a fast pace, and as a mom to two kids and a new pup you can feel a bit manic at times.
After rushing out the door yesterday morning to get my son to VBS on time and get our very sick puppy to an emergency vet visit (one of three I made yesterday) I had to do a double check: they are dressed, their teeth are brushed, I fed them and no one was forgotten at home (I've never done this, but it's always been a fear of mine) 
For me, this was success!
I know all of you can relate to this- and when life gets like that, unfortunately the fun stuff sometimes gets neglected- like my blog
so I'm taking a moment to share some things that I've made and just never got around to posting
Mini Lemon cupcakes with Lemon Cream Cheese Frosting for a baby shower- the little boy these cupcakes were made to celebrate has already been born and is completely precious by the way
 These I made for another baby shower for a little boy that was born two weeks ago and who is also extremely adorable; Herb and Parmesan Pull Apart Bread and Chocolate Cherry Cream Cheese Cake Truffles
and lastly a cake with my favorite color combo: pink and brown

Happy Mother's Day!

Happy Mother's Day! 
Today I woke up to the sound of hissing........it kind of alarmed me and as I laid there I was going through my half asleep mind trying to figure out what the sound could possibly be.
Then I realized it's Mother's Day and that hissing sound I was hearing was my husband pushing around the steam mop.
Epic win!

We (when I say we, I mean my husband) are boiling 50 pounds of crawfish today and having some neighbors and friends over to join us. I am so excited, and I'm hoping there are tons of leftovers. All the posts on facebook about everyone in New Orleans going to Jazzfest is really making me jealous and I'm dying for some crawfish bread! I hope all you mamas out there have a fabulous day full of relaxation and being spoiled!

Above is a picture of the cake I made for my neighbor for her Mother's Day family get-together. She asked for a cake with a butterfly so this is what I came up with; a vanilla cake with vanilla buttercream, and a mound of purple and blue hydrangeas with a chocolate butterfly. On the side is chocolate raspberry cream cheese cake truffles in matching white and blue white chocolate.

Sweet Repeats

Last night I hosted bunco and for a sweet treat I tried something a little different, do you remember when I made these for Brianna's Sweet Shop Birthday party?
When I was buying all of the supplies to make them, I bought these thinking they were standard size ice cream cones, then when I opened them at home I realized how small they were and they just wouldn't work but they were already opened and I knew I could think of something to do with them so they didn't go to waste
Well, this Monday on the weekly menu I had these beauties as the dessert and I had all of the centers that I had to remove from the cupcakes to fill them with cookie dough left over along with some extra icing so I made cookie dough flavored cake balls and stuffed them into the mini ice cream cones, dipped them in white chocolate and adorned them with sprinkles!
I just love the way they came out and they truly were delicious! I actually had two people (at different times without hearing each other) request time in a closet by themselves to have a moment with their treat. If that's not a compliment, I don't know what is!

Birthday Bake Shop

This past weekend we celebrated my daughter turning 2. It rained the entire day with no break, but we had a wonderful time celebrating with friends and family. Since Brianna is not yet old enough to demand a certain theme for her party, I totally took advantage and went with a theme I've been wanting to do for a while; Brianna's Bake Shop!

To keep with the bake shop theme I knew I wanted to do an assortment of different sweets. As a favor for each child to take home I decided to make candy filled ice cream cone rice krispie treats.
I made a batch of rice krispie treats, scooped it out onto a wax paper lined cookie sheet with an ice cream scooper and allowed them to fully cool. Then dip the scoops in melted chocolate or colored candy melts and sprinkle with different toppings. Once the ice cream scoops are set, dip the rim of a flat bottomed ice cream cone in the melted chocolate (this will act as your glue), fill the cone with candies, and attach the chocolate covered scoop to the cone.

I really think they were adorable, and my kids loved ripping into them!

I made the cake look like the front of a bakery with the table and chairs and tiny cakes on the table. The cake was coconut and vanilla layers filled with a coconut swiss meringue buttercream and toasted coconut

Holly Jolly Christmas Treats

I have been busy baking up a storm lately! Here's a preview of all the sweet things I've been making

Later in the week, I hosted a cookie swap for our playgroup and I decided to make chocolate s'more cookies

over the weekend we went to a small get together and I brought cake truffles and cupcakes

I also have been baking a variety of cookies to pass out to neighbor's and for my son's teachers

Pretty in Pink

My friend Stephanie is getting married in October and last week I went to New Orleans for her Bachelorette party. Of course I offered to do the desserts and this is what I decided to make
Chocolate Cupcakes with Raspberry Almond Cream Cheese Icing- rich chocolate cake with the cream cheese, almond and raspberry flavored icing was delicious! I kept with the pink themed decorations and used pink swirl cupcake liners and handmade sugar flowers with hot pink sprinkles
Chocolate Covered Peanut Butter Truffle Pops- a smooth peanut butter center covered in chocolate
Pink Almond Macaroons- light and airy almond flavored cookies

Birthday Fun

My neighbor needed something sweet for a last minute birthday get together. We decided on two different cupcakes and cake truffles. Above are yellow butter cupcakes with chocolate frosting and around them are chocolate cherry cake truffles. Below are the chocolate cupcakes with peanut butter icing. The peanut butter icing was a new recipe I was trying and I was really surprised by how light and fluffy it was. My husband got to taste the extra icing and said it tasted just like a nutter butter cookie. I really liked it too and I hope the birthday girl enjoyed them!

Bunnies and Babies

It has been a busy week around here! I hosted our neighborhood bunco and decided to do an Easter-y dessert. At Michaels a couple weeks ago I saw these adorable eddible bunnies, and just had to get them. They went perfectly on these peanut butter cream cheese truffles with a white chocolate bottom and milk chocolate top. They were perfectly bite sized to eat while we played.
Today my mom's group got together for a baby shower playdate. Knowing that our friend is having a girl I went with a pink raspberry cream cheese buttercream on my favorite chocolate cake. My favorite flavor combo is chocolate and raspberries, and these were divine! Good luck Erin, we can't wait to meet our newest "sprout"!!

Cake Truffles

Cake truffles or cake balls are popping up everywhere I look lately and I really love them. They are bite sized, delicious, and when I make them I love to make a variety of flavors for people to try. Red Velvet with cream cheese, Strawberry Shortcake, Chocolate with Vanilla Buttercream, Mint Chocolate, Tiramisu.........the possibilities are endless!


This Monday was The Bachelor finale and I was going to a "Sweet and Spicy" (Tenley being sweet and Vienna being spicy) party for us all to watch the big proposal. When the invite said to bring something sweet or spicy I knew these truffles would be perfect for my something sweet. Too bad Jake picked the "spicy" one!

I went with chocolate cream cheese and strawberry shortcake flavors this time. I hope the girls enjoyed them as much as I did!
